I love Latin food, but especially the food from my mother's country of Colombia. I have been a professional vegan chef for eight years, but in 2020 I went to Colombia for three months to really explore the recipes of the country. Much to my delight, I discovered that many of the typical dishes we eat in Colombia, like the soup ajiaco, that comes from our indigenous ancestors, was originally vegan, but then changed to include meat by European colonizers. My food is not only about paying homage to Colombia, but it's also about decolonizing our diets and understanding the history and impact of the foods we eat.Certifications
